Ingredients
1 x 500ml tub Marshfield blackcurrants in clotted cream
1 x 200ml double cream
6 x meringue nests – crushed
1 x 500g pack of fruits of the forest frozen berries – Cherries, Grapes, Blackberries, & Blackcurrants
1 x dessertspoon golden caster sugar

Method
Defrost the frozen packet of fruits of the forest berries – keep half the packet aside and heat up the other half add a dessertspoon of caster sugar and bubble for 5 mins press through a sieve to make a coulis and leave to cool.
In a large bowl semi whip the cream then when ready to serve add the crushed meringue nests, the balls of ice cream and the fruits of the forest fuit and coulis. Fold together until rippled through. Serve immediately.
